Niçoise Salad
Ingredients
Makes: 4 servings
Cook: 10 minutes
1 head butter lettuce, washed and torn
2 hard-boiled eggs, sliced
6 ounces chunk light tuna
2 tbsp. slivered almonds
1 1/4 cup snow peas, blanched
½ medium thinly sliced red onion
1 tbsp. capers
LEMON GARLIC VINAIGRETTE:
Juice and zest of 1 lemon
1 tsp. minced garlic
¼ cup canola oil
2 tablespoons chopped fresh parsley
Kosher salt, to taste
Black pepper, to taste
Directions
In a small bowl, whisk together the lemon juice, zest, garlic, oil, and parsley, and season with salt and pepper. Set aside.
In a large bowl, toss the lettuce, snow peas, and onion with the vinaigrette. Top with the sliced eggs, tuna, almonds, and capers. Serve immediately.
