Greek Turkey Salad

Ingredients

Makes: 6 servings

  • Olive oil cooking spray

  • 11⁄4 pounds turkey breast strips (tenders)

  • 2 tablespoons lemon juice

  • 1 tablespoon Greek seasoning

  • Salt and pepper

  • 12 cups chopped romaine lettuce (about 20 ounces)

  • 1 cucumber, seeded and chopped

  • 2 medium tomatoes, cut up

  • 1⁄2 medium red onion, thinly sliced

  • 1⁄2 cup pitted Kalamata olives

  • 1⁄3 cup crumbled feta cheese

  • 3⁄4 cup “light” roasted garlic balsamic salad dressing

  • 1⁄4 cup fresh oregano leaves

 

Directions

 

Coat a large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add turkey, lemon juice, and Greek seasoning. Cook and stir until turkey is cooked through, 5 to 7 minutes. Season to taste with salt and pepper. Set aside to cool.

In a large salad bowl, combine romaine, cucumber, tomatoes, red onion, olives, and feta. Toss with salad dressing.

Top with turkey strips. Garnish with oregano leaves.
