Green Beans with Red Pepper, Olive, and Feta Relish
INGREDIENTS
11 pounds green beans trimmed
1 cup diced jarred roasted red peppers well drained
1 cup crumbled feta cheese
1/3 cup sliced kalamata olives
1 cup diced red onion
3 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon black pepper
INSTRUCTIONS
In a large saucepan, blanch green beans in boiling salted water for 4 to 6 minutes, or until crisp-tender. Plunge into a bowl of ice and water to stop the cooking process. Drain well and pat dry with paper towels. (This can be done ahead of time.)
In a bowl, place diced roasted peppers, feta, olives, onion, oil, vinegar, and black pepper. Gently toss to combine.
Place a skillet over medium-high. Add beans and cook, stirring occasionally, for 3 to 4 minutes. Transfer to a serving platter and top with relish mixture.
