Fancy Mac

To serve everyone their own little macaroni and cheese, preheat oven to 400°F. Spray 4 ramekins with cooking spray. Heat a 20-ounce package Bob Evans® Tasteful Sides macaroni and cheese according to package directions, then stir in a 10-ounce package frozen chopped spinach, thawed and drained, 1 cup shredded Gouda cheese, 1 package bacon, cooked and broken into pieces, 1⁄2 teaspoon salt, and 1⁄2 teaspoon freshly ground black pepper. Let mixture stand for 10 to 15 minutes to cool. Add in 2 lightly beaten eggs. Spoon evenly into ramekins. Sprinkle with more Gouda cheese. Bake for 20 minutes, or until centers are set.
