Maple-Honey Apple Fritters
INGREDIENTS
Canola or vegetable oil for deep frying
3 cups all-purpose baking and pancake mix
1 teaspoon apple pie spice
2 tablespoons sugar
1/2 cup apple cider
1/4 cup maple syrup
2 apples tart, peeled and diced
Honey for serving
INSTRUCTIONS
Pour enough oil into a deep heavy-bottomed pot to come halfway up the sides of the pot. Place over medium-high heat and bring to 350 degrees F, using a thermometer to measure. Set a wire rack over a rimmed baking sheet.
In a bowl, mix together baking mix, apple pie spice, and sugar. Slowly stir in cider and maple syrup until just combined, then fold in apples.
Working in batches, gently drop fritter batter into hot oil about 1/3 cup at a time (do not overcrowd the pot). Cook for 2 minutes, then flip over to fry second side, another 2 minutes. Fritters should be deep golden brown. Drain fritters on rack set on baking sheet.
To serve, pile fritters on a serving platter and drizzle with honey.
