INSTRUCTIONS
For Doughnuts
Preheat oven to 400°F. Lightly coat two 6-cavity doughnut pans with cooking spray.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together cider, buttermilk, melted butter, and eggs. Stir wet ingredients into flour mixture until it comes together in a thick batter. Take care not to overmix. Scrape batter into a zip-top plastic bag. Snip one corner and pipe into prepared doughnut pan. Batter should come three-fourths of the way up the sides.
Bake for 8-10 minutes, or until a pick inserted in doughnut side comes out clean and doughnut springs back when lightly pressed. Cool in pan for 5 minutes, remove, and cool completely.
For Glaze
In a small saucepan, combine bourbon with honey and heat over low until honey is dissolved. Pour glaze into a bowl. In a separate bowl, stir together sugar and cinnamon and pour onto a shallow plate.
Dip a doughnut into glaze, flipping to coat, then into cinnamon sugar mixture. Repeat with remaining doughnuts and serve.
