Shrimp "Ceviche"
Ingredients
Makes: 4 servings
Start to Finish: 15 minutes
8 ounces cooked peeled and deveined bay or other small shrimp
1⁄2 cup refrigerated pico de gallo salsa
2 tablespoons lime juice, ReaLime®
2 tablespoons finely chopped fresh cilantro
1 avocado, diced
Salt
Ground black pepper
Directions
In a medium bowl, combine shrimp, salsa, lime juice, and cilantro. Let stand for 5 to 10 minutes.
Add avocado; toss to combine. Season with salt and pepper.
