Pecan Bacon Bites
INGREDIENTS
1/2 pound thick cut bacon
1/2 cup chopped pecans
1/2 cup brown sugar
Freshly ground black pepper
4 slices rye bread
1/2 cup cream cheese softened
1 tablespoon Worcestershire sauce
2 tablespoon chopped chives
INSTRUCTIONS
Preheat the oven to 375 degrees F.
Line a baking sheet with aluminum foil and top it with a baking rack. Place the bacon in one layer on top of the rack.
Mix together the pecans and brown sugar with a good grinding of pepper. Evenly sprinkle the mixture over the bacon. Put the bacon into the oven and bake until the sugar is melted and the bacon is crisp, about 20 to 25 minutes. Remove and let cool a bit until crisp.
While the bacon is cooking, toast the rye bread and cut each slice into quarters. Mix together the cream cheese and Worcestershire sauce. To serve, spread the toast with the cream cheese mixture and top with a piece or two of bacon cut to fit. Then top with another small dollop of the cream cheese mixture and garnish with chopped chives.
