Old Bay Wings
Ingredients
Makes: 6 to 8 servings
3 pounds chicken wings
1/2 cup butter (1 stick)
1 tablespoon Old Bay Seasoning, plus additional for dusting
1 tablespoon fresh lemon juice
1 teaspoon hot pepper sauce
Ranch Dipping Sauce (see recipe, below)
Directions
Using a large sharp knife, remove the wing tips from the wings; discard tips. Separate the wings and the drummettes. Place wings and drummettes in a very large bowl.
In a small saucepan melt the butter. Whisk in the Old Bay Seasoning, lemon juice, and hot sauce. Let cool until lukewarm.
Whisk cooled butter mixture and drizzle half of it over chicken wings and drummettes. Toss chicken to coat with sauce.
Grill wings and drummettes over a medium-high grill for 15 to 20 minutes, turning once, until skin is crisp and browned and meat is cooked through.
Toss hot wings with remaining half of butter mixture. Sprinkle with additional Old Bay Seasoning to taste and serve with Ranch Dipping Sauce.
To make Ranch Dipping Sauce, in a medium bowl combine 1 cup sour cream, 1 cup milk, 3 tablespoons dry Ranch Dressing mix, and 1/4 cup sliced green onions.
