Maple Sweet Potatoes

Maple Sweet Potatoes

INGREDIENTS

  • 1 (29 ounce) can  cut sweet potatoes drained, 

  • 2 tablespoons butter

  • 2 tablespoons pure maple syrup

  • 1/2 teaspoon pumpkin pie spice

  • Salt and ground black pepper

  • Chopped toasted pecans and additional pure maple syrupoptional

INSTRUCTIONS

  1. Place drained sweet potatoes in a microwave-safe bowl. Cover and microwave on high heat setting (100 percent power) for 5 minutes. Drain well.

  2. Stir in butter, maple syrup, and pumpkin pie spice. Use a fork to mash sweet potatoes. Season to taste with salt and pepper. Sprinkle with chopped toasted pecans and drizzle with additional maple syrup (optional)
