Chardonnay Rice
Ingredients
Makes: 4 servings
Cook: 25 minutes
1 1/2 cups dry white wine,
such as a sauvignon blanc (Sterling Vintners Collection)
1/2 cup golden raisins
1 tablespoon unsalted butter
Pinch salt
1 1/2 cups long grain rice
1/2 cup sliced almonds
1 tablespoon chopped parsley
Directions
In a small pot over medium heat, warm 1/2 cup of the wine. Take the pan off the heat, add the raisins, and let sit until cooled and raisins plump up.
In a medium pot over high heat, bring 2 cups of water, remaining wine, butter, and salt to a boil. Stir in the rice, reduce the heat to low, cover, and cook until the rice is tender, about 20 minutes. Strain the raisins and scatter them over the top of the rice. Cover and let rest for about 10 minutes. Fluff the rice with a fork, stir in the almonds, garnish with parsley, and serve.
