Pork Noodle Salad
Makes 4 servings
1⁄3 cup sesame, ginger, and soy dressing
1 tablespoon lime juice
1 tablespoon peanut butter
2 teaspoons chili-garlic sauce
4 cups water
2 packages (3 ounces each) “Oriental favor” ramen noodles
1 1⁄2 cups shredded cooked pork roast
1⁄2 cup shredded carrots
1⁄2 red bell pepper, thinly sliced 2 scallions, sliced on an angle
1⁄4 cup loosely packed fresh mint leaves
1⁄2 cup loosely packed fresh cilantro leaves
1⁄4 cup finely chopped peanuts
1. In a small bowl, whisk together dressing, lime juice, peanut butter, and chili-garlic sauce. Set aside.
2. In a large saucepan, combine water and seasoning packets from noodles and bring to a boil. Add noodles and cook for 3 minutes. Drain and rinse with cold water and set aside.
3. Combine pork, carrots, bell pepper, scallions, mint, and cilantro in a large bowl. Add noodles and dressing to bowl and gently toss to combine. Serve garnished with chopped peanuts.
