Hula Burgers
Ingredients
Makes: 4 burgers
1 pound ground chuck
1 package (3 ounces) real bacon bits
2 tablespoons hamburger seasoning
4 canned juice-packed pineapple rings
1 yellow onion, cut crosswise into 4 thick (1⁄2 inch) rings
2 tablespoons butter, at room temperature
4 onion rolls, split
4 tablespoons mayonnaise
4 butter lettuce leaves
Directions
In a large bowl, combine ground beef, bacon bits, and hamburger seasoning. Divide mixture evenly into 4 portions and form into patties the same diameter as pineapple rings.
Firmly press a pineapple ring into top of each patty.
Preheat grill to medium-high (350°F to 400°F). Oil grates when ready to start grilling.
Place burgers pineapple side down on grill, cover with grill lid, and cook for 5 minutes on each side, or until desired degree of doneness. At the same time, grill onion slices for 4 to 6 minutes, or until slightly charred.
Spread butter evenly on cut sides of onion rolls. Grill rolls for 1 to 2 minutes per side, or until golden brown.
Spread 1 tablespoon mayonnaise on bottom halves of rolls. Top each with 1 lettuce leaf and grilled onion. Place burgers on top of onions. Cover with roll tops and serve.
