Chalupas
INGREDIENTS
1 pound ground beef
1 package taco seasoning mix 1.25 ounces
2/3 cup salsa
1 cup jalapeño juice
1 cup canola oil
flour tortillas 8-inch
1 cup shredded Mexican cheese blend
Assorted toppings: shredded lettuce, chopped tomatoes, sliced olives, guacamole, and sour cream
INSTRUCTIONS
Position rack 6 inches from heat and preheat broiler.
In a large skillet, brown beef over medium heat. Add taco seasoning, salsa, and jalapeño juice. Add a little water if mixture is too dry. Reduce heat to low and simmer for 10 minutes.
In another large skillet, heat oil over medium-high heat. Fry tortillas fat until crispy on both sides.
Place tortillas on individual broiler-proof plates. Cover each tortilla with meat mixture, then sprinkle cheese over top. Broil for 2 minutes or until cheese melts.
Serve chalupas topped with shredded lettuce, tomatoes, olives, guacamole, and sour cream.
