Chalupas

INGREDIENTS

  • 1 pound ground beef

  • 1 package taco seasoning mix 1.25 ounces

  • 2/3 cup salsa

  • 1 cup jalapeño juice

  • 1 cup canola oil

  • flour tortillas 8-inch

  • 1 cup shredded Mexican cheese blend

  • Assorted toppings: shredded lettuce, chopped tomatoes, sliced olives, guacamole, and sour cream

INSTRUCTIONS

  1. Position rack 6 inches from heat and preheat broiler.

  2. In a large skillet, brown beef over medium heat. Add taco seasoning, salsa, and jalapeño juice. Add a little water if mixture is too dry. Reduce heat to low and simmer for 10 minutes.

  3. In another large skillet, heat oil over medium-high heat. Fry tortillas fat until crispy on both sides.

  4. Place tortillas on individual broiler-proof plates. Cover each tortilla with meat mixture, then sprinkle cheese over top. Broil for 2 minutes or until cheese melts.

  5. Serve chalupas topped with shredded lettuce, tomatoes, olives, guacamole, and sour cream.
