Broiled Salmon
Makes 4 servings
Olive oil cooking spray
1⁄2 cup fat-free sour cream
2 tablespoons horseradish
1 teaspoon Worcestershire sauce
1 pound fresh or thawed frozen salmon fillets
2 teaspoons extra-virgin olive oil
1 1⁄2 teaspoons salt-free lemon-pepper seasoning
1. Position a rack 4 to 6 inches from heat and preheat broiler. Lightly coat a baking sheet with cooking spray. 2. In a bowl, stir together sour cream, horseradish, and Worcestershire. Cover and refrigerate until ready to serve.
3. Cut fish into 4 serving portions. Brush fish with olive oil and sprinkle with lemon-pepper seasoning. Place on baking sheet.
4. Broil fish for 4 to 6 minutes per side, or until fish pulls apart easily into flakes but is not dry. Do not over-cook. Serve with horseradish cream.
