Bacon Meat Loaf

  • Cooking spray
  • 1 pound ground beef
  • 1 pound ground turkey or veal
  • 1 pound ground pork
  • 24 whole roasted garlic cloves
  • 1⁄2 cup grated yellow onion
  • 1⁄4 cup finely chopped fresh flat-leaf parsley
  • 1⁄2 cup ketchup
  • 1 cup fresh bread crumbs, minced
  • 1 packet (1.12 ounces) meat loaf seasoning mix
  • 1 teaspoon pepper
  • 1 egg
  • 1⁄4 cup Dijon mustard
  • 3 tablespoons light brown sugar
  • 8 slices thin-sliced bacon
1. Preheat oven to 350°F. Line a rimmed baking sheet with foil and coat with cooking spray. 2. In a bowl, combine beef, turkey, pork, garlic, onion, parsley, ketchup, bread crumbs, meat loaf seasoning mix, pep- per, and egg. Mix with a rubber spatula or clean hands just until the ingredients are combined. Turn the meat mixture out onto prepared baking sheet and shape into a loaf. (Or divide mixture into 4 to 6 equal portions and shape into individual meat loaves.) 3. Spread mustard over top of meat loaf and sprinkle with brown sugar. Wrap bacon around loaf, tucking in the ends. Bake for 50 to 60 minutes for one large loaf or 25 to 35 minutes for smaller loaves, until internal temperature reaches 160°F. Let meat loaf stand for 10 minutes before slicing. 4. If desired, serve slices of the bacon-wrapped meat loaf on a platter with green peas or some other simple fresh vegetable side dish.
