Mexican Meatball Rice Soup

INGREDIENTS
1 can diced mild green chiles 7 ounces
2 ounces cans diced tomatoes 14.5each
2 ounces cans low sodium beef broth 14each
2 ounces cans low sodium chicken broth 14each
16 ounces frozen meatballs
1 medium white onion chopped
1 cup chopped fresh cilantro
1 cup converted rice
2 teaspoons dried oregano
Salt and pepper to taste
chopped red onion cilantro, for garnish
Lime wedges for squeezing
INSTRUCTIONS
Combine all ingredients except the garnish in a 4- to 5-quart slow cooker. Cover and cook on HIGH for 3 to 4 hours or LOW for 8 to 9 hours
Serve piping hot, garnished with red onion and cilantro. Serve with lime wedges, for squeezing.
Layered Fiesta Dip

INGREDIENTS
4 avocados
1 packet guacamole seasoning mix 1.1 ounces
1 jar salsa 16 ounces
1 container sour cream 8 ounces
2 plum tomatoes diced
Tortilla chips for serving
INSTRUCTIONS
Halve and pit 2 avocados. Scoop flesh into a small bowl. Add guacamole seasoning and mash together.
Halve, pit, and peel remaining 2 avocados and cut into small cubes.
Divide guacamole among 6 serving bowls. Top with a layer of salsa. Dollop each with sour cream. Top with diced avocados and tomatoes. (If you’re making this ahead, don’t add these until just before serving.) Serve with tortilla chips.
Sparkling Mint and Grape Sangria

16 fresh mint leaves
2 bottles Stellina di Notte® Prosecco chilled, 750ml each
2 cups white grape juice chilled
1 cup orange liqueur
slices Fresh strawberries sliced fresh green figs, red appleFresh mint sprigs, for garnish (optional)
INSTRUCTIONS
In a large pitcher, muddle mint leaves with back of a wooden spoon to release flavors. Stir in sparkling wine, grape juice, and liqueur. Stir in strawberries, sliced figs, and apple slices. Garnish with mint, if desired.
