Bob Evans Sweet Potato Cookies
Makes 42 cookies
Ingredients
Cookies
3/4 cup Vegetable shortening
3/4 cup Brown sugar
1 large Egg
1 cup Bob Evans Mashed Sweet Potatoes
1 teaspoon Kosher Salt
1 teaspoon baking soda
1 teaspoon Pumpkin Pie Spice
2 cups All-purpose Flour
Frosting
1 cup Butter, Unsalted
3 cups Powdered Sugar
1/2 teaspoon Maple extract
Red and Green sprinkles and decorating sugar
COOKIES:
Preheat oven to 350 F. Line a 9″ square baking pan with foil, allowing foil to extend over sides of pan. Coat with cooking spray. Using hands, press cookie dough evenly into bottom of pan. Bake 18-20 minutes.
2. On low speed, slowly add flour mixture until well mixed. Drop by 1 1/2 TBSP portions onto baking sheets. Bake 10-12 minutes or until golden brown. Cool completely before frosting.
FROSTING:
1. In a bowl, beat butter until fluffy; gradually beat in confectioners’ sugar, then maple extract until fluffy. Spread each cookie with maple buttercream frosting. Top with sprinkles and decorating sugar as desired.
