Petite Petit Fours
Ingredients
Makes: 48 pieces
1 white cake from a mix
1 teaspoon lemon, coconut, almond, or orange extract, optional.
1 can of vanilla frosting
1 teaspoon extract
1 bag shredded coconut

Directions
Make a white cake from a mix in a 9×13 pan. If you like, flavor the cake with 1 teaspoon lemon, coconut, almond, or orange extract. Cool completely, then cut into 48 pieces (6 lengthwise cuts; 8 crosswise cuts). Place 1 can of vanilla frosting in a microwave-safe bowl. Microwave 30 seconds, then stir. Microwave again, stirring, until slightly thinned. Stir in 1 teaspoon extract. Frost cake pieces. Roll sides in tinted coconut. (To tint, place coconut in plastic bag. Dilute liquid food coloring with a little vodka and add to bag; squeeze bag to tint evenly.) Top cakes with purchased sugar flowers (or pipe one on). Arrange in a bakery box.
