Delicious Lady Apple Cake
INGREDIENTS
Cooking spray
1 box spice cake mix
1 1/2 cups apple juice
1/3 cup applesauce
3 eggs
2 sticks butter 1/2 pound
1 1/2 cups packed light brown sugar
5 cups powdered sugar
1/4 cup heavy whipping cream
2 teaspoons vanilla extract
1 cupcake
4-5 candied lady apples
INSTRUCTIONS
Preheat oven to 350°F. Coat two 8-inch round cake pans with cooking spray.
In a bowl, with an electric mixer on low speed, beat together cake mix, apple juice, applesauce, and eggs for 30 seconds. Increase speed to medium and beat for 2 minutes.
Divide batter between cake pans. Bake for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean. Let cool completely in pans on a rack.
In a small saucepan, combine butter and brown sugar and heat until butter is melted and sugar is until completely dissolved. Pour into a large bowl and refrigerate to chill. When butter mixture is thick and pasty, remove from refrigerator and slowly beat in powdered sugar, cream, and vanilla until thick, fluffy, and spreadable. If frosting is too thick, add a bit more cream, 1 teaspoon at a time. If frosting is too thin, add more powdered sugar, 1 tablespoon at a time, until you reach a nice spreadable consistency.
Place a cake layer on a cake pedestal. Spread with frosting and place second on top. Frost sides and top of cake and cupcake, then top with cupcake. Decorate with candy apples.
