Casserole Squares

Christmas Casserole Squares
Makes 6 servings

• Cooking spray

• 12 large eggs

• 1⁄3 cup heavy (whipping) cream

• 1 teaspoon salt

• 1 teaspoon pepper

• 1 jar (12 ounces) roasted red peppers, rinsed and chopped

• 1 cup crumbled cooked bacon 4 ounces goat cheese crumbles

• 1⁄3 cup sliced scallions

• 10 slices white bread, torn

1. Preheat oven to 400°F. Lightly coat a 9 x 13-inch baking dish with cooking spray.
2. In a medium bowl, whisk together eggs, cream, salt, and pepper until well combined. Stir in peppers, bacon, goat cheese, and scallions.
3. Spread torn bread over bottom of baking dish. Pour egg mixture over bread. Bake for 18 to 20 minutes, or until set. Let stand for 15 minutes.
