Ingredients

Makes: 8 servings
  • 3 (14-ounce) cans whole artichoke hearts

  • 1 cup shredded red cabbage, grated

  • 1 cup carrot, grated

  • 2 scallions, finely sliced

  • ¼ cup Italian dressing

  • Sesame seeds, for garnish

  • Kosher salt, to taste

  • Black pepper, to taste

Directions

  1. Cut the top off each artichoke heart and pull out the center of each with your fingers to form a cup.
    In a large bowl, toss together the cabbage, carrots, and scallions. Add the dressing and salt and pepper to taste. Fill the artichoke cups with the slaw, garnish with sesame seeds, and serve.
