Ingredients

Makes: 8 servings
  • 2 cups cubed watermelon

  • 2 cups unpeeled sliced red apples 

  • 1 pint blueberries

  • 1 tablespoon lemon juice

  • 1⁄3 cup honey

  • 1⁄4 cup chopped fresh mint

  • 1 cup frozen nondairy whipped topping, thawed, Cool Whip®

  • 1 tablespoon lemon zest

Directions

  1. In 8 glasses, layer each with watermelon, apples, and blueberries.

  2. In a small bowl, combine lemon juice, honey, and mint. Spoon evenly over fruit. Top with whipped topping, and sprinkle with lemon zest.
