  • 1 (8-ounce) package lo mein noodles

  • 2 tablespoons vegetable oil

  • 2 teaspoon chopped garlic

  • 1 teaspoon chopped ginger (Christopher Ranch)

  • 1 (16 ounce) bag frozen stir fry vegetables

  • ¼ cup soy sauce

  • 1 teaspoon sugar

  • 1/4 teaspoon kosher salt

  • 2 scallions, finely sliced

  • 1 tablespoon sesame oil


  1. Cook the noodles according to package directions. Drain, rinse with cold water, and drain again.

  2. In a large skillet or wok over medium-high heat, add the vegetable oil. When it is hot add the garlic and ginger and cook for 30 seconds. Add the vegetables and stir fry until the vegetables are heated through, about 2 to 3 minutes. Add the noodles and mix well. Mix together the soy sauce, sugar, salt, and stir it into the noodles. Stir in the scallions and sesame oil and serve.
