Bunny Hotcakes With Apple Butter Cream
A few creative additions turn plain pancakes into a cute-as-a-bunny breakfast. Use one pancake for the face and a second to cut out ears and a bow tie. The icing on the cake—apple butter cream, garnished with licorice whiskers and chocolate chip eyes and nose. All kids say is “yum” and “yeah”!

Ingredients
2 cups just-add-water pancake mix, Aunt Jemima Complete®
11/2 cups apple juice
11/4 teaspoons ground cinnamon, McCormick®
1 container (8-ounce) whipped cream cheese, Philadelphia®
2/3 cup apple butter
Whipped cream cheese (optional)
Nonstick cooking spray, PAM®
Black licorice (optional)
Large chocolate morsels, Hershey’s® (optional)
Directions
In a medium mixing bowl, whisk together pancake mix, apple juice, and cinnamon. Set aside.
In a small mixing bowl, combine whipped cream cheese and apple butter until smooth. If desired, place additional whipped cream cheese in a self-sealing plastic bag. Snip a small corner from plastic bag and set aside.
Lightly spray a large skillet with nonstick cooking spray and heat over medium heat. Scoop pancake batter with 1⁄3 cup measure to make
pancakes. Flip pancakes when they start to bubble. Cook an additional 1 to 2 minutes or until golden brown. Remove to cooling rack.To make bunny, place 1 pancake in the center of the plate. On a cutting board, cut ears and bow tie from another pancake. Arrange to make bunny. Repeat with remaining pancakes.
Reheat hotcakes in microwave for 30 seconds to 1 minute. Spread with the apple butter mixture. Use the cream cheese in the plastic bag to pipe eyes, mouth, and a bow on the bunny. Decorate with licorice for whiskers and chocolate morsels for eyes and nose.
